It doesn't get much better than this. Late summer tomatoes paired with sweet and juicy peaches, pickling cucumbers, burrata, and herbs. So simple, yet so scrumptious. I could eat this every day! Any stone fruit would be delicious in this salad, so feel free to substitute or add plums, nectarines, or apricots.

- 1 peach, cut into wedges
- 2 summer tomatoes, cut into wedges
- 1 pickling cucumber (small cucumbers used for pickling), cut thinly on a diagonal
- 6 cherry tomatoes
- 1 ball of burrata
- fresh mint leaves
Arrange the peaches and tomatoes on 2 plates. Scatter the cucumbers and cherry tomatoes on top. Tear the burrata into bite size pieces and add to the salad. Sprinkle lightly with salt and a few leaves of fresh mint. Drizzle lightly with dressing and serve immediately.
- 1/4 cup rice vinegar
- 1/2 cup olive oil
- handful of fresh basil
Combine all ingredients in the bowl of a mini food processor and process until well combined.
