If you have a pesky sweet tooth like I do that demands to be satisfied, tame the beast with these guiltless, no bake, healthy bites. Made primarily from dates and nuts, they contain no added fats or sugar, and can be made in under 10 minutes! Most importantly, they are truly delicious!
14 soft pitted dates
1 c. almonds
2 T. cacao powder
1/2 c. unsweetened coconut flakes
13 tart dried cherries
Place first 3 ingredients into a food processor fitted with the blade. Process until mixture comes together. Using a tablespoon, roll mixture into a ball, inserting a cherry into the center. Roll balls in flaked coconut. Store in an airtight container for up to 2 weeks in the refrigerator.
Makes 13 truffles. Recipe can doubled.
