For those days when you're short on time and dinner needs to be on the table, this pasta dish is for you! It takes less than 30 minutes to make, and relies on most ingredients already in your pantry. It's a great choice for those nights when you're too tired to fuss or in a rush. Best of all, it's delicious and a crowd pleaser!
Spaghetti with clam sauce
- 4 T. olive oil
- 2 garlic cloves, peeled and sliced thinly
- 1/2 cup dry white wine
- 1-280z. can of diced tomatoes, drained
- 2-10 oz. cans whole baby clams, preferably wild
- 1/2 cup chopped parsley
- pinch of red pepper flakes to taste
16 oz. spaghetti
Add olive oil and garlic to a large skillet and cook the garlic for a few seconds until fragrant but not browned. Add the tomatoes and cook for a minute, then add the wine. Simmer for a couple of minutes, allowing the sauce to thicken a bit, then add the clams, parsley, and red pepper flakes to taste. Turn off heat and set aside.
Cook the pasta in boiling water until al dente. Drain and add to the skillet with the sauce. Cook on medium heat, tossing the pasta with the sauce for a minute. Add additional olive oil if necessary. Serve immediately.
