Wondering what to do with all these luscious summer tomatoes? Look no further, I've got the answer for you. No, it doesn't involve jars of tomato sauce ,or canning of any kind. I'm talking juicing of the alcoholic variety. After all, it is the holiday weekend. So get out your blender, juicer, or Vitamix, if you're lucky enough to own one, and whip up a pitcher of Bloody Marys.
You can use any variety of summer tomatoes you may have on hand. Just cut them into wedges and off you go. I used my Breville Juicer, that my husband bought me at Williams-Sonoma last year. Unlike the blender, it separates the pulp from the juice. If you are using a blender and the pulp is bothersome to you, it can always be strained out. Now just look at that beautiful color, not to mention the fresh flavor of your freshly squeezed tomato juice! You are only minutes away from kicking back and enjoying the most delicious Bloody Mary that you have ever tasted!
Makes 8 - 6 oz. cocktails
- 3 lbs. Fresh Tomatoes, washed and cut into wedges
- 1 cup Vodka
- 1/2 cup Lemon Juice, freshly squeezed
- 1 t. Celery Salt
- 2 t. Sriracha, Chili or to taste
- 2 T. Worcestershire Sauce
- 2 t. Horseradish
Place cut tomatoes into the juicer and process. You should have about 4 cups tomato juice.
Mix all ingredients in a large pitcher and chill. When ready to serve, garnish glasses with celery stalks, lemon wedges, and olives.
