It all started with a box of mangos. The next thing I knew I was making popsicles. After all, it's almost summer and who can resist a homemade popsicle? Especially when there's chocolate involved.
Coconut Mango Popsicles with Magic Shell Drizzle
Makes 6-4 oz. popsicles
- 2 cups canned coconut milk
- 3 T. honey or agave
- 1 ripe mango, cut into cubes
- 1/4 cup orange juice
- 1 cup chocolate chips
- 2 T. coconut oil
You will need 6- 4 oz. popsicle molds or Dixie cups with popsicle sticks
Add the cubed mango and orange juice to a blender. Puree until smooth. Remove from blender and set aside. Combine the coconut milk and sweetner together in the blender.
Assemble popsicles by adding a few spoonfuls of the mango puree to the bottom of the mold, alternating with coconut milk. Freeze for at least 4 hours before serving.
Make Chocolate Magic Shell by placing the chocolate and coconut oil into a microwave proof container. Microwave in 30 second intervals until chocolate is melted. Stir to combine. Set aside to cool. Do not refrigerate.
Release popsicles from molds by dipping in hot water for about 20 seconds, then release gently. Using the tongs of a fork, drizzle with magic shell and serve immediately.
