Regardless of what happens later in the day, my morning always begins with a healthy breakfast. It often consists of fruit and yogurt, fruit and oatmeal, or fruit and cottage cheese. I like fruit in the morning, what can I say? Recently I tried something new. It's a pudding made with chia seeds, one of the latest superfoods. These tiny seeds are highly nutritious, packed with protein, calcium, and iron. They're a bit pricey, but a little goes a long way. The pudding is ridiculously easy to make. There's no cooking involved, simply a quick mix of the ingredients, and an overnight in the refrigerator. Here's how it's done.
In a small bowl, mash 1 cup of fresh raspberries with a fork. Add 1 cup of almond, coconut, or soy milk and 1 T. honey or agave (optional). Mix well to combine.
Divide the mixture among two serving containers. Sprinkle each container with 1-1/2 T. of Chia seeds. Mix well, cover, and refrigerate overnight. The seeds will thicken the liquid into a tapioca like consistency.
Next morning, remove the pudding from the refrigerator and add toppings of your choice.
Before adding fruit, I like to spread a layer of apple sauce over the pudding for added flavor and bit of sweetness. You could also use apple or nut butter if you like.
Next comes an assortment of fruit, whatever is on hand, and a little sprig of fresh mint leaves.
And there you have it. Quick, easy, healthy, and delicious. A great way to start the day!
